One of the most famous and original traditional foods of Iran is Koofteh Tabrizi. As you see from its name , this is a food of Tabriz, which is now very popular even among foreign tourists. Each chef has his own recipe for cooking Koofteh Tabrizi, and if you go to any restaurant in East Azerbaijan or in most of restaurant in other provinces of Iran, you can see this dish with a different look and size.

Semi-fatty minced meat 250 g
1 cup cobs
1/3 cup rice
1 egg
2 onions
1 cup chopped onion or chopped leek
1/3 cup freshly chopped savory
2 tbsp. Tomato paste
2 tbsp Turmeric.
1/2 teaspoon nutmeg powder
1/2 teaspoon black pepper powder

To prepare is Koofteh Tabrizi, you must first cook the cobs separately in water until they are completely cooked. Then we put the rice in a suitable container with half a cup of water and some salt and turmeric on high heat to boil and the water is completely drained. Once the rice water is drained, set it aside to cool.
After this step, pour the cooked cobs with a number of onions and minced meat into the mixer until they are completely mixed together. Add the eggs, half-cooked rice, salt, pepper, turmeric and grated nutmeg and knead well with your hands. Knead the ingredients until they become sticky and stick to your hands.

To prepare the meatball sauce in a pot, fry the onions in a little oil until the onions are semi-golden. When frying the onions, beat them a little yellow to make them more colorful and tasty.
Then add the tomato paste to the onions and fry thoroughly. Then pour a cup of water into the pan and put it in the pan to boil over high heat. After boiling, reduce the heat under the pan. .
When making meatballs, knead the ingredients one more time and remove as much as one orange from the ingredients and put them in the sauces as a large ball. You should wet your hands with water so that the meatballs do not stick to your hands.
Then close the lid and raise the heat to bring the meatballs to a boil in the sauce water. After the meatballs have boiled, reduce the heat and let the meatballs cook on low heat for 40 minutes.
